Kitchen Hack: Let Nothing Go To Waste
I grew up in Texas; fortunate to have a mother that loved eating good high quality food in a state that can make a dish out of almost anything! On the less gourmet side of my dining days in Texas I tried everything from scorpion laced lollipops and pickle juice ice to frog legs and alligator meat. I can feel some of you readers out there making faces…
Don’t knock it ’til you’ve tried it.
Something I always found fascinating was watermelon rind pickles, if you have never tasted one, you do not know what you are missing. Now older, wiser and boasting culinary training to boot, I can think of tons of things to do with melon rinds… Which leads us to:
Hack #19: 0% Waste. 100% Creativity
Next time you eat a cantaloupe or a watermelon, do not throw out the exocarp. That thick and firm, pale colored rind that can be found between the fleshy part of the fruit and its skin is completely edible! It can be peeled and used in lieu of cucumber in a salad, a gazpacho or even as a pickle.
